Baldur has made a cauldronette of Marinara sauce. It looks to be about a gallon which seems woefully inadequate to fill a normal-sized cauldron.
I peeled the eggplant, soaked the slices in salt water, drained and rinsed them, dipped each slice in flour, then beaten egg and then in bread crumbs.
Once breaded they were fried in a small amount of olive oil until golden.
Then they were placed on a couple layers of newspaper so some of the grease was blotted up.
Next they were arranged in a large baking pan and put in the oven for an hour.
Baldur does this so each slice is thoroughly cooked right through the center. I've found that if they are fried until done to my satisfaction the breading burns so this is my compromise.
Before dinner grated Asiago cheese will be strewn (+14 points because NOBODY uses 'strewn' anymore) over the top and they will be baked for another 10 minutes.
Farfalle pasta and marinara will be served on the side.

This way the eggplant is quite thoroughly cooked and the breading remains crisp.
Rhode Island has a huge Italian community and generally epplant is fried, layered with tomato sauce and cheese and baked as a casserole,
creating a delicios but mushy meal.
The exception is the occasional restarant where the eggplant is deep fried and placed atop the pasta before everything is covered in tomato sauce and cheese.
It is all placed briefly under the broiler., This variant is preferable in my mind though deep frying obviously is not the healthiest route.

Hence Baldur's method is the best of both worlds, plus using olive oil seems better than whatever nasty hydrogenated stuff they use in the fryers.

Dragon has recently been introduced the very tasty treat Baba Ganouj (an eggplant dip). I'm now interested in trying other eggplant creations. I think I may have to try out Baldur's method of making it.

'All Baldur, All the Time'
If eggplant is not thoroughly cooked it can be rather vile. I go to great strides to make sure it's as cooked as possible.
Baba ganouj (or -j +sh depending on where you are) is roasted until quite thoroughly dead.

Robert had a cheese omelet this morning but I've eaten enough eggs already this past week so it was fruit for me.
I had my first Beurre Bosc pear of the year from the tree in the gardens.
It's still a rather young tree and only produced 4 pears this season put they are marvelous.

We finished the last of the peaches 2 weeks ago, thankfully they did not ripen all at the same time. We each ate several peaches a day for 3 weeks, plus gave them away to friends and neighbors.
I think we won't be craving peaches again anytime soon.

We've moved house and have black grapes ready to harvest. They are quite small and seeded., so fiddly to eat. Do I need a lot of them to make wine?

I may not be allowed to spit on my brother, Baldur, but I am allowed to put salt water and asparagus juice in my sister's cup of water (she doesn't know,ever)!

To make a gallon of wine you would need more than 2 gallons of grapes, be sure to press out every last drop of juice.

maddyjean, it's great that he's still 2 because if you spit on him when nobody is looking they will just assum he spit up a little bit. When they get older they start to squeal.
I would hope that I could tell if my drinking water were salted. Asparagus juice sounds evil. Baldur highly approves.

When you tell we to spit on him, I think of me spitting on his head. If I spit on, say the bottom of his shirt, everyone would think he ripped a hole in his diaper again while he was bored with napping!

Thank you Baldur. I'm not sure if I'll have enough for that. Maybe stick with grape juice. The blackbirds keep taking the grapes anyway!

Once, my brother, Jackson, through a plastic car at my face. He must've known he would be in trouble because he immediatly started screaming. As soon as that happened my step-mom ran into the room and gave me a look.
